Healthy Wheat Flour & Jaggery Cake | indi.living

My mom told me that her friends couldn’t believe that cake could be made out of wheat flour and jaggery. Believable, since I was the one who forced my mom to switch that refined flour to wheat and that sugar powder to jaggery. After three failed attempts of experimenting to find the right balance of ingredients, my mom has now perfected this cake recipe. Since I have been enjoying this cake for so long, while people didn’t even know it was possible to make, I decided to ask my mom to share her recipe. So aunties, if you are reading this, you’re most welcome. Before you say this can’t possibly taste as good as a normal cake, let me tell you this: THAT IS NOT TRUE. I can say that because, all my life, all I have survived on, are desserts. I have a severe sweet tooth. So much so, that I can’t touch chilli or spicy food, hence I know my desserts.
The recipe below is interspersed with my mom’s pro tips (even the obvious ones because I didn’t know those basics either). If you are an avid baker, please ignore those, and if you aren't (like me), do read them and I assure you a smooth first time baking experience.

Prep time: 15 mins
Baking time: 45 - 55 mins
Size: 6‘’ dia and 2½” high (the size of my baking pan)
Ingredients:
1 cup jaggery
1 cup vegetable oil
1 cup wheat flour
4 eggs
50 gms walnut
½ tsp baking soda OR 1 tsp baking powder
1 tbsp protein powder (optional)
1tsp vanilla essence (optional)

(So the flavours I love the most are chocolate and vanilla and hence, I always add those. Plus I’m very obsessed with my chocolate flavour protein powder, so I add it to practically everything, including my dairy-free oatmeal. But, feel free to use any essence/flavour you like)
Preparation:
1. Add the jaggery powder, oil, and eggs in a grinder. Blend it well till the mixture looks fluffy.
2. Transfer this batter to a bowl.
TIP: Use your hand to transfer. Because first of all, we are Indians, and second, it’ll prevent wastage (this is obviously my tip and not mom’s)
3. Sieve the wheat flour along with the baking soda/powder (and the protein powder) in a separate bowl
4. Add the sieved mixture, one spoon at a time, into the batter and whisk well.
5. To this, add the essence you want (vanilla for me). Break the walnuts into tiny pieces. Add half of the portion in the bowl and mix thoroughly.
TIP: You know the batter is well mixed when bubbles start to appear on the surface
6. Grease a pan with a bit of oil and pour the batter evenly into it.
TIP: Tap the pan gently on your table to flatten the batter
7. Sprinkle the rest of the walnuts on top
8. Cover the baking pan with a silver foil and perforate the top.

Baking:
You can bake your cake in two ways, method 1 is using an oven, and method 2 is on the gas stove if you don’t have an oven.
Method 1:
1. Preheat your oven.
2. Place the baking pan in the oven for 42 to 45 mins at 180 degrees centigrade.
Method 2:
1. Pour water into a pressure cooker till it reaches about 1’’ from the base. Place the steamer stand into the cooker.
2. Remove the whistle and place the cooker on a medium flame for the water to heat.
3. After about 5 minutes, place the baking pan inside the cooker and let it bake for 50 to 55 minutes.

Serving:
1. After the specified time, take the cake out and remove the silver foil.
TIP: Insert a toothpick in the cake and if it comes out clean, your cake is ready. If it doesn’t, let the cake bake for 2-3 minutes more under the same conditions.
2. Let the cake cool.
3. To remove the cake from the pan, hold it over the serving plate upside-down and lightly tap. Once it’s out, flip the cake.
4. You can serve this cake with tea or just grab a piece after every supper for that perfect sweet finish.

Hope you liked the recipe. And yes I wasn't kidding on the tasty part. Even I was surprised at how delicious an atta cake can taste.
